I failed to get into the Easter spirit this spring until today! The much needed sunshine and gloriously delicious temperature may have something to do with that.
A very berry smoothie for a light lunch. We’re eating a late Sunday afternoon meal around 4 so I don’t want to be too full to enjoy it!
In the blender:
- 2 handfuls baby spinach
- 1/2 cup Lactaid fat free milk
- 1/2 cup plain lowfat lactose free yogurt
- 1/2 cup frozen blueberries
- 1/2 cup frozen raspberries
- 3 ice cubes
My mom made a really great point a few weeks ago when I mentioned that drinking your greens is all the rage. Digestion starts in the mouth so isn’t chewing your greens an important part of a healthy diet?

However, today I wanted something to quench my thirst and refresh my palate =) Variety is a good thing!
Tart and sweet, ice cold (brainfreeze cold) and exactly what a sunny Sunday in April calls for.
Since you know I can’t stand a liquid meal, I toasted a whole spelt English muffin and topped it with Cedar’s taboule salad.
This is a great ready-made taboule. I’ve never made my own but someday (when finals and work and laundry aren’t taking over my life).
