Friday Night Fries

Sweet potatoes are a deceptive little bunch. They aren’t even really potatoes. In fact, in all of their orange, sweet, comforting goodness, they pack a nutritional punch that puts Yukon Golds and Russet Reds to shame.Who doesn’t love Vitamin A and fiber? C’mon, now.

Eat these babies as often as you want. These fries are your new, lifelong friend. Promise.

Cumin-Spiced Baked Sweet Potato Fries

serves 1

Ingredients:

  • 1 sweet potato, washed
  • olive oil
  • kosher salt
  • cumin

Method:

  • Preheat oven to 425*.
  • Slice your sweet potato in half lengthwise. Then slice each half across the middle and slice 1/4″ thick lengthwise slices from each half.
  • Toss on a baking sheet with a drizzle of olive oil, sprinkle of kosher salt, and a very generous 1/4 teaspoon of cumin.
  • Bake for 30 minutes, flipping halfway through.

Simple? Yes. Simple enough for a Friday night, even. Tasty? You bet.

Making Them Count

Don’t hate me.

I ate another veggie burger for loonch today.

Can you really blame me, though?

On my run back from the gym this afternoon this unbelievable crazing for falafel took over. It completely consumed me.

It may have had something to do with the guy walking up ahead holding a freshly-made sandwich.

I totally could have stolen it out of that guy’s hands. I’m fast. I bet I’m even faster when I’m stealing someone’s warm, spicy wrap, dripping with tzatziki sauce.

I decided it wasn’t worth the risk. He had on sneakers.

I’m not one to go buy lunch when I have plenty of food waiting to be eaten, though, and making it from scratch is definitely a project for a different (less homework-consumed) day. After reasoning my way up the one mile hill to my house, I realized I could satisfy my craving with the glorious sandwich you see above.

A black bean veggie burger topped with caramelized onions and peppers and a bit of mozzarella cheese. Toasted pita. Side spinach salad with pinto tomatoes.

Oh, yeah, that’ll do 😉

Crispy on the outside, soft in the middle. Warm and gooey cheese. Sweet P and O’s. Totally makes up for this disaster.

Cumin always leaves something sweet to be desired. Cinnamon apple dipped in Justin’s chocolate almond butter, anyone?

I really wish the choco almond butter was in focus….maybe it would look less like…well, you know.

We talk about food around here. We won’t go there.

Food shopping time! My reward for working on a paper much of the day =) You probably reward yourself with trips to Whofie, too…right?
